Pop the butteries into the toaster, but here’s the crucial part — don’t remove them straight away once they pop. Thanks to their high fat content, they’ll be quite soft and a little soggy at first (much like freshly baked cookies straight from the oven). Leave them for a few minutes to rest and cool a bit. This allows the outside to crisp up beautifully while dropping to a temperature that won’t burn your fingers. If you like, you can lift them out with wooden tongs and place them on a wire rack to cool slightly. It’s this short cooling process that truly brings a buttery back to life — that lightly crispy, flaky exterior giving way to the soft, chewy centre we all recognise as a proper, old-fashioned buttery.
