Introducing Griffin Reserve! We decided to hold on to a couple of our Griffin batches and age them longer to give you a chance to taste Griffin Reserve. Instead of releasing the cheese at 120 days, these wheels have aged around 10 months. This has given them a more intense flavor and a richer texture, making them perfect for Winter. Snuggle up by a fire with a Porter while nibbling on some Griffin Reserve or even shave it on top of your pasta for added flavor. Be sure to get your hands on one of these limited batches soon!
